In a large bowl, combine  our, sugar, baking powder, and salt. In a separate bowl, whisk together the eggs, milk, and vanilla. Pour the wet ingredients to the dry and whisk.
Pour melted Blueberry Better Butter into the batter, along with the lemon zest and lemon juice. Fold gently into the batter until smooth. Then add the blueberries.
Scoop batter into the waffle iron and cook until waffles are golden brown.
Serve with additional Blueberry Better Butter, a squeeze of lemon juice, and powdered sugar.
