Place potatoes in a large pot and cover with water. Bring to a boil and simmer until potatoes are tender, about 15 minutes. Drain, then place potatoes on a baking sheet.
Use the bottom of a jar or glass to smash potatoes into flat patties.
Brush generously with melted Garlic Butter. Salt and pepper to taste, and sprinkle Parmesan cheese on top.
Bake at 425° F for 20-25 minutes.
Garnish with parsley and more melted butter, and serve.
