Ingredients

  • 1 lb. baby Yukon Gold potatoes
  • 5 Tbsp. Garlic Butter
  • Salt and pepper, to taste
  • ¾ C. Grated Parmesan
  • Fresh chopped parsley, to garnish

Directions

  • Preheat oven to 425° F.
  • Place potatoes in a large pot and cover with water. Bring to a boil and simmer until potatoes are tender, about 15 minutes. Drain, then place potatoes on a baking sheet.
  • Use the bottom of a jar or glass to smash potatoes into flat patties.
  • Brush generously with melted Garlic Butter. Salt and pepper to taste, and sprinkle Parmesan cheese on top.
  • Bake at 425° F for 20-25 minutes.
  • Garnish with parsley and more melted butter, and serve.
