Ingredients
- 1 Pound (box) Bowtie pasta
- 12 Strips of bacon, diced
- 2 C. Frozen green peas
- ½ C. Red onion, chopped
- 8 Tbsp. Garlic Better Butter
- 1/2 C. Grated Parmesan cheese
- ½ C. Fresh mint, chopped
- Salt and pepper, to taste
Directions
- Cook the pasta. Boil the bowtie pasta in salted water until al dente, then drain, reserving a bit of pasta water.
- Crisp the bacon. While the pasta’s cooking, heat a large skillet over medium heat. Add the chopped bacon and cook until crispy, about 5 minutes. Remove the bacon from the pan and set it aside, leaving the bacon drippings in the skillet.
- Make it garlicky. Add the garlic butter to the skillet with the bacon drippings, stirring until melted and sizzling.
- Add peas and cream. Add the peas to the skillet and sauté until heated through. If you’re adding cream, pour it in now and stir, letting it reduce slightly until it’s thick and velvety.
- Combine with pasta. Add the cooked pasta and crispy bacon to the skillet, tossing to coat everything in that garlic butter sauce. If it’s too thick, a splash of pasta water will do the trick. Season with salt and pepper.
