Ingredients

  • 4 baked potatoes, baked and halved.
  • 1/2 C. Better Butter Garlic Butter, melted
  • 2 C. cheddar cheese
  • 1/2 C. crumbled bacon
  • 1/2 C. sour cream
  • 1/4 C. green onion, sliced

Directions

  • Preheat the oven to 425°F.
  • Cut the already baked potatoes in half lengthwise. Use a spoon to scoop out the middle, leaving a 1/4 to 1/2 inch on the skin.
  • Brush the inside of each potato skin with melted Garlic Butter.
  • Bake for 10 minutes, or until edges are starting to brown.
  • Reduce oven temperature to 375°F.
  • Sprinkle cheddar cheese over the potato skins and bake for 10 minutes, or until cheese is melty.
  • Remove from oven and top with bacon, sour cream, and green onion, and serve warm.
