Make a series of 1/8 inch cuts in the sweet potatoes, only slicing 2/3 of the way through. Arrange on a baking sheet.
Brush with melted Cinnamon Butter, making sure to get down into the slits.
Bake at 425° F for 50-60 minutes, or until the potatoes are fork tender. Season lightly with salt. Serve with additional butter and fresh herbs, if desired.
