6 strips bacon, cooked and crumbled (save a couple of strips for garnish)
Optional: Maple syrup, for serving
Directions
Cook the bacon in a skillet until crispy, then crumble into small pieces. Set aside.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, whisk together the eggs, milk, melted Cinnamon Butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Don't overmix—it's okay if the batter is a little lumpy.
Gently fold the crumbled bacon into the batter.
Preheat your waffle iron according to its manufacturer’s instructions and lightly grease it with cooking spray.
Pour the batter onto the preheated waffle iron, using about 1/3 cup of batter per waffle (or follow your waffle iron’s instructions). Cook for about 3-5 minutes, or until golden and crisp.
Serve the waffles warm, topped with extra crumbled bacon, Cinnamon Butter, and a drizzle of maple syrup!
