Ingredients

  • 2 C. all-purpose flour
  • 2 Tbsp. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 large eggs
  • 1 1/2 C. milk
  • 1/2 C. Better Butter Cinnamon Butter, melted (1 package)
  • 1 tsp vanilla extract
  • 6 strips bacon, cooked and crumbled (save a couple of strips for garnish)
  • Optional: Maple syrup, for serving

Directions

  • Cook the bacon in a skillet until crispy, then crumble into small pieces. Set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the eggs, milk, melted Cinnamon Butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Don't overmix—it's okay if the batter is a little lumpy.
  • Gently fold the crumbled bacon into the batter.
  • Preheat your waffle iron according to its manufacturer’s instructions and lightly grease it with cooking spray.
  • Pour the batter onto the preheated waffle iron, using about 1/3 cup of batter per waffle (or follow your waffle iron’s instructions). Cook for about 3-5 minutes, or until golden and crisp.
  • Serve the waffles warm, topped with extra crumbled bacon, Cinnamon Butter, and a drizzle of maple syrup!
