Ingredients

  • 8 eggs, beaten
  • ½ tsp. salt
  • ½ tsp. black pepper
  • 3 Tbsp. Black Truffle Butter
  • 1 small onion, diced
  • ½ C. sliced cherry tomatoes
  • ½ C. zucchini
  • ½ C. crumbled feta cheese
  • 1 Tbsp. chopped fresh parsley

Directions

  1. Preheat oven to 375°F
  2. In a mixing bowl, combine eggs, salt, and pepper. Set aside.
  3. Melt Black Truffle Butter in a pan over medium heat. Add onions and zucchini and mix to coat with butter. Saute 5 minutes, then add tomatoes and cook for another 2 minutes.
  4. Pour egg mixture over top of the veggies. Cook for 2 minutes without stirring, then sprinkle feta on top and transfer to the oven.
  5. Bake at 375°F for 15-20 minutes, or until eggs are just set.
  6. Remove from oven & garnish with fresh parsley.
