In a mixing bowl, combine eggs, salt, and pepper. Set aside.
Melt Black Truffle Butter in a pan over medium heat. Add onions and zucchini and mix to coat with butter. Saute 5 minutes, then add tomatoes and cook for another 2 minutes.
Pour egg mixture over top of the veggies. Cook for 2 minutes without stirring, then sprinkle feta on top and transfer to the oven.
Bake at 375°F for 15-20 minutes, or until eggs are just set.
