Potato & Steakhouse Sausage Breakfast Skillet

Ingredients

  • 2 Large red potatoes
  • 2 Tbsp. Steakhouse Butter
  • ½ C. Onion, diced
  • Salt and pepper, to taste
  • ½ lb. Ground breakfast sausage
  • 3 Eggs
  • 1-2 Tomatoes, diced
  • Fresh parsley to garnish
  • Bread, for dipping.

Directions

  1. Use a fork to poke holes in the potatoes and wrap each potato in a damp paper towel.
  2. Microwave potatoes for 5-8 minutes, or until each potato is soft. Allow to cool slightly, before cutting into cubes.
  3. Melt Steakhouse Butter in a large skillet over medium heat. Add onion, and sprinkle salt and pepper to taste. Cook for about 3 minutes, then add the breakfast sausage. Break into chunks and brown in the skillet.
  4. Add potato cubes and stir to combine.
  5. Make 3 wells and crack an egg into each well. Cover and cook for about 2-3 minutes.
  6. Garnish with diced tomato and fresh parsley.
  7. Serve warm with bread for dipping.
