Lemon Herb Salmon & Veggie Sheet Pan Dinner

Ingredients

  • 1 Salmon Filet
  • 1 Medium yellow squash, cut into ½ inch pieces
  • 2 C. Broccoli florets
  • 1 C. Red onion, cut into petals
  • 6 Tbsp. Lemon Herb Butter, melted
  • Salt and pepper
  • 1 Lemon, cut into wedges

Directions

  • Preheat oven to 400° F.
  • On a large sheet pan, arrange the salmon filet, squash, broccoli, and red onion.
  • Brush salmon generously with half of the Lemon Herb Butter. Drizzle the rest of the Lemon Herb Butter evenly over the vegetables.
  • Season with salt and pepper.
  • Bake at 400° F for 15-20 minutes, or until salmon is cooked to your liking.
  • Garnish with lemon wedges, and squeeze some lemon juice onto the salmon.
