Ingredients

  • 2 large zucchini, thinly sliced
  • 8 oz Garlic Better Butter, melted
  • 1½ cup shredded Parmesan cheese
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 400° F.
  2. Use a mandolin to thinly slice zucchini, and place them in one layer on a baking sheet.
  3. Brush with Garlic Butter, then sprinkle with Parmesan cheese.
  4. Bake at 400° for 20-25 minutes, or until edges are browned.
  5. Taste and season with salt and pepper, to taste. Allow to cool completely.
  6. Repeat with additional zucchini slices– we had enough zucchini for 3 trays full.
  7. Serve.
