Grilled Garlic Veggie Kabobs
Ingredients
- 1 Red Onion, chopped
- 1 Zucchini, chopped
- 1 C. Cherry Tomatoes
- 1 C. Mushrooms, sliced
- 1 Green Bell Pepper, Sliced
- ½ C. Garlic Butter, melted
- Salt and pepper to taste
Directions
- Slice and chop your veggies and set aside in a large bowl.Â
- Melt ¼ C. of Garlic Butter in pan.
- Pour melted butter over veggies and toss to fully coat.
- Skewer your buttery veggies and sprinkle with salt and pepper. Grill on medium for 10 minutes, flipping every few minutes.Â
- Finish at high heat for 2 minutes or until slightly charred.Â
- While veggies are cooking, melt remaining ¼ C. of butter.Â
- Take skewers off the heat and drizzle with remaining melted butter. Enjoy!
