Ingredients

  • 1 Bag or box of farfalle bowtie pasta 
  • ½ C. Better Butter Garlic Butter, melted (1 package)
  • 2 C. mushrooms, sliced (about 8 oz)
  • 4 C. fresh spinach (about 1-2 handfuls)
  • Salt and pepper to taste

Directions

  • Boil a pot of salted water and cook your pasta according to package instructions. Once done, drain and set aside, reserving 1/3 cup of pasta water.
  • In a large skillet, melt ¼  C. of Better Butter Garlic Butter over medium heat. Add the sliced mushrooms and cook until they release their moisture and become golden brown, about 5-7 minutes.
  • Toss in the spinach and cook until it wilts, about 2-3 minutes.
  • Add the cooked pasta to the skillet with the mushrooms and spinach. Stir well to coat everything with the Garlic Butter. Add a bit of the reserved pasta water to help combine.
  • Stir in the remaining Garlic Butter and season with salt and pepper. Serve hot and enjoy!
